Canada
Canadian wine isn't something that we see too much of in the UK but there are some great wines to be found here.
The main centre of production is on the southern shore of Lake Ontario, in the Niagara Peninsular, where major grape varieties such as Chardonnay, Riesling and Pinot Noir have been grown with much success.
But Canada also has a 'speciality' wine: Icewine. A distinctive dessert wine from both Vidal and Riesling varietals, Icewine is made from grapes that have been left on the vine to increase sugar levels and then picked in freezing conditions so that the water in the grapes is frozen but not the sugar. When pressed, the frozen water is removed with the grapes, leaving just small quantities ofthe super-sweet juice which is then fermented. The result is an intense but amazing wine which does carry a high price tag but, considering the labourious nature of its production, is well worth it.
